Monday Meals

And.....the promised recipe from last week....

Beef Lo Mein!

12 oz. noodles
2 tsp. sesame oil
2 tsp. minced fresh ginger
2 cloves garlic, minced
12 oz. grilled beef, cut into 1" pieces
1 cup snap peas
1/3 cup shredded carrots
3/4 cup beef broth
2-3 Tbsp. Bragg's amino acids (or soy sauce)
1/4 cup chopped fresh cilantro leaves

Cook noodles according to package directions. Meanwhile heat the sesame oil in a large skillet. Add ginger and garlic and saute for 1 minute. Add beef, snap peas, and carrots; saute 1 more minute. Add broth and amino acids (soy sauce) and bring to a simmer and cook 5 minutes, until carrots are soft. Drain noodles and add to sauce. Toss with cilantro.

As always, I have a couple notes to add on what I used and/or did.
  • I used quinoa pasta, because we're trying to stay gluten-free for a little while
  • I used a Porterhouse steak; I'm sure you could use whatever cut you prefer or what you have on hand!
  • I didn't have snap peas, so I used bell pepper and zucchini cut into strips
And that's it--enjoy!


One Project Done

This is just a very small project, but it's one that's been hanging over me, and I just couldn't get to it. When we moved in, the medicine cabinet in the master bath was nasty, and we thought we would replace it. Well, we didn't, so I finally got around to cleaning it out, and making it useable.
I would still like to do something to the front; glue a wood frame on it or something, I'm not sure. But at least our stuff is in there now.

I didn't quite get the very first "before" picture. This is after a couple light coats of white spray paint.

I decided to just cover up the rust instead of trying to make it look pretty. Scrapbook paper and Mod Podge works for me!!

Monday Meals

This recipe is not a dinner meal, but a really yummy breakfast bread recipe that I found a couple weeks ago. We loved it!

Pina Colada Zucchini Bread

  • 4 cups all-purpose flour
  • 3 cups sugar
  • 2 teaspoons baking powder
  • 1-1/2 teaspoons salt
  • 1 teaspoon baking soda
  • 4 eggs
  • 1-1/2 cups canola oil
  • 1 teaspoon each coconut, rum and vanilla extracts
  • 3 cups shredded zucchini
  • 1 cup canned crushed pineapple, drained
  • 1/2 cup chopped walnuts or chopped pecans, optional
  • Line the bottoms of three greased and floured 8-in. x 4-in. loaf pans with waxed paper and grease the paper; set aside.
  • In a large bowl, combine the flour, sugar, baking powder, salt and baking soda. In another bowl, combine the eggs, oil and extracts. Stir into dry ingredients just until moistened. Fold in the zucchini, pineapple and walnuts.
  • Transfer to prepared pans. Bake at 350° for 45-55 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks. Gently remove waxed paper. Yield: 3 loaves (12 slices each).
Note: I think this would make 3 small loaves. I've made it in 1 loaf, 4 mini loaves and 6 muffins. A friend made it into just 2 regular sized loaves.


Also, we've started a gluten-free, sugar-free, yeast-free diet to try and solve some skin issues and hopefully eliminate some of my headaches. So my recipes from now on will probably be a mixture of old favorites and new diet recipes. Some of the ones we've tried, though, are really tasty and you could make them with regular ingredients. So bear with me, and wish us luck!!
